With excellent cooking resistance, Acquerello rice aged 7 years is an authentic champion with a unique flavor. Precisely for this reason it was also chosen by Gualtiero Marchesi for the preparation of the famous saffron risotto with gold leaf. It is also ideal with black garlic and acidified cherry jam, to sublimate an evening for two.

The delicacy of this food has its roots in 1935 when the Colombara estate was purchased by Cesare Rondolino (father of Piero, the current owner). The soil, particularly rich in water and fertile, proved to be very suitable for the cultivation of rice.

Thus began the company’s history, but the real turning point came in 1984. Carnaroli Acquarello rice, packaged in practical cans as a hallmark, began to be subjected to helix aging. This procedure allows to preserve intact each grain, keeping the nutritional values of Acquerello rice aged 7 years unchanged.

The properties of this unique rice

Acquarello in cans is a rice of excellent quality, which boasts a rich taste and a particularly intense aroma. Become the protagonist of every dish and conquer even the most demanding palates. It absorbs the seasoning and broth well, completely reducing the starch deposits on the bottom of the saucepan, without any dispersion during cooking. The grains always remain distinct, boasting the properties of brown rice.

The Acquerello rice aged 7 years is easily digestible, satiating and suitable for the preparation of different recipes. It is highly nutritious and presents itself as a healthy and genuine food. The cooking times are similar to those of Carnaroli rice: about 15 minutes. As anticipated, you can use it for many preparations, without taking on a sticky consistency.

A recipe to try

As we said before, one of the most delicious recipes you can try is that of Watercolor Rice with black garlic and acidified cherry jam. To recommend the recipe of Gianluca Rossetti, chef and teacher of cooking classes of Eataly Milano, are the rice producers themselves. The ingredients for four people are:

  • 340 g of Acquerello rice aged 7 years,
  • 400 ml fresh milk,
  • Two heads of black garlic,
  • 100 g of Parmigiano Reggiano,
  • 100 g butter,
  • 4 tablespoons soy sauce and 2 rice miso,
  • 200 g pitted cherries,
  • 140 g of brown sugar,
  • 60 g of kombucha,
  • 2 tablespoons lemon juice,
  • Salt q.b.


The first step to bring this recipe to the table is to prepare a cherry jam. You can make it by cooking cherries for at least 40 minutes over low heat, along with sugar, lemon juice and kombucha. During cooking you can add a little water to get the desired consistency. Then you can put the milk and garlic cloves in a saucepan, let it boil for about 15 minutes, season with salt and blend everything to obtain a cream.

You will then have to make a broth with half a liter of water and add the miso and soy to it. After seasoning with salt, you can boil everything for about 15 minutes. After toasting and cooking the Acquerello rice aged 7 years in the broth, it will be time to add the black garlic cream. Then you will have to stir with butter and Parmesan, then serve and finish the dish with cherry jam. It will be a real treat!
