Lasagna with artichoke mousse, smoked salmon and mullet roe

Among the first gourmet Christmas dishes we find the lasagna alla bolognese, but today we offer you a more refined version: lasagna with artichoke mousse and smoked salmon.


Ingredients for 4 people

  • 300 g egg lasagna
  • 250 g smoked salmon
  • 250 g spreadable cheese
  • 300 g fresh artichokes (alternatively frozen)
  • 150 g mozzarella, diced
  • 30 g mullet roe
  • 1 sprig of fresh parsley
  • 1 clove of garlic
  • 100 ml milk
  • Q.B. grated cheese
  • Q.B. Salt up
  • Q.B. Extra virgin olive oil


Preparation

First take care of the artichoke mousse: inside a non-stick pan fry the artichokes over low heat with garlic and a generous round of EVO oil, all covered with a lid.

After about 5 minutes, when the artichokes are almost cooked, add the parsley and season with salt. Be careful not to overdo it with salt as salmon and bottarga are two foods already in themselves sapid.

Once cooked, inside a blender, insert the artichokes, spreadable cheese and warm milk, blend everything for a few minutes until you get a soft and creamy mousse.

On top of an oiled baking tray arrange a layer of artichoke mousse, a layer of previously blanched pastry, the pieces of salmon, the cubes of mozzarella and a sprinkling of grated cheese. Add another layer of dough, artichoke mousse, mozzarella, salmon and grated cheese, continue until you get more layers.

In the last layer also add a sprinkling of bottarga. Composed the lasagna, place it in a preheated oven at 180 degrees for about 25/30 minutes. After the time, let it harden for a few minutes and finally serve hot.


Gnocchi with Aosta Valley fondue with black truffle and speck chips

Gnocchi are one of the most loved first gourmet Christmas dishes by everyone, but try an even better version: gnocchi with Aosta Valley fondue with black truffle and speck chips.


Ingredients for 4 people


Preparation

Cut the speck into thin strips and cook over low heat until crispy, then melt the butter over low heat in another saucepan.

Now take care of the gnocchi: cook them in salted water. Once the gnocchi are cooked, stir them in the pan with butter, add the Aosta Valley fondue and finally the crispy speck chips. Finish the dish with a generous sprinkling of grated cheese.


Pappardelle with venison ragout and salted ricotta

Ingredients for 4 people

  • 350 g egg pappardelle
  • 2 jars of Alpenzu venison ragout
  • 20 g butter
  • Q.B. salted ricotta


Preparation

Inside a large non-stick pan, heat the venison sauce over low heat . Once heated, add the butter and turn off the heat, this last ingredient will serve you to make everything creamier.

Cook the pappardelle in salted water for a short time, when they are cooked, drain and stir for a few moments inside the pan with the meat sauce. Last the dish with some flakes of salted ricotta, serve the gnocchi hot.
