How does a pizza become gourmet and how it differs from the others

As we wrote above, a gourmet pizza is often made following new recipes and aiming at different combinations of ingredients. This can concern the seasoning, but above all the dough. Today there are many types of flour, which allow you to make a tasty and different pasta. Unrefined flours and those produced with a mix of cereals are excellent, especially if they are obtained using the most traditional methods.

How to make a gourmet pizza? The recipe

To prepare your special pizza you will need the following ingredients:

  • 500 g of Mulino Marino Buratto flour (type 2 soft wheat flour),
  • 35 g of extra virgin olive oil,
  • 300 ml of water at room temperature,
  • 5 g of fresh brewer’s yeast,
  • 5-10 g of fine salt.

Preparation

The first thing to do to make a gourmet pizza is to put the yeast in the water and make it dissolve well. Put the flour in a large bowl, pour the water slowly and start kneading.When you get to half the water, add the salt. Continue to pour the water and knead until you get a compact and smooth dough. Then insert the oil a little at a time and knead again. Continue to work the dough on a floured pastry board.

When you have made a homogeneous and smooth dough, put it in the bowl, cover it with a cloth and let it rest for at least a couple of hours. Then take it back, knead it a little more and put it back in the bowl. This time, however, let it rest in the oven off, leaving the light of the appliance on. When the dough has doubled in volume, you can roll it out and prepare your gourmet pizza.

Generally, the best solution is to let the dough rise for at least 8 hours. Reaching 24 hours of leavening you can get an even softer and more digestible dough.

The cooking and filling of gourmet pizza

To fill your pizza, you can choose the most classic ingredients and create a unique filling, perhaps adding a few more touches of taste. You can also start from a white or red base, then play with the ingredients you prefer and try unexpected combinations. Here are some pairings to try:

  • Pesto, cherry tomatoes and provola cheese.
  • Zucchini, zucchini flowers and mozzarella.
  • Peas and bacon.
  • Artichokes, orange and buffalo mozzarella.
  • Cod and truffle.
  • Peppers and buffalo mozzarella.
  • Bacon, cream and onions.
  • Cream and ham.
  • Etc.

It is advisable to cook for 6-7 minutes the pizza seasoned only with tomato or white in a static oven preheated to 250 °. Subsequently, you can take it out of the oven, finish the filling and bake again, continuing to cook at the same temperature for another 6 or 7 minutes.
