Ingredients for 6 people

  • 550 g venison pulp,
  • 400 g of pappardelle,
  • 400 g of tomato pulp,
  • 40 g of onion,
  • 40 g of carrot,
  • 40 g celery,
  • 10 juniper berries,
  • 1 cloves,
  • cinnamon in a stick,
  • laurel b.,
  • red wine b.,
  • extra virgin olive oil B.,
  • salt b.,
  • peppercorns to taste
Cooking time: 3 hours.

The preparation of venison ragout

To begin with, cut the venison pulp. Depending on your tastes you can decide to cut it into small cubes or chop it using a mixer. Subsequently, to prepare the venison sauce pasta, make chopped onion, celery and carrots and brown it in a pan with a little oil for about a couple of minutes. At this point add the chopped venison and let it brown. As soon as the meat is evenly browned, add a pinch of salt and tomato pulp. Sprinkle with a little red wine and water, making sure that the meat is well covered. Then add the spices: juniper, carnation, cinnamon, bay leaf and pepper. In case you have a gauze bag, you could think of enclosing all the spices inside so that you can remove them more easily when cooked. Finally cover your venison sauce with a lid and let it cook over low heat for about 3 hours. From time to time check that the sauce does not dry out excessively. If this happens, you can add some more water.

The preparation of pasta with venison sauce

The ideal pasta for venison sauce is a fresh egg pasta. You may decide to make it at home or buy one of a good quality brand. Pappardelle could be the ideal format. Game sauce, in fact, goes particularly well with thick and rough types of pasta. Alternatively, if you prefer, you could also opt for rigatoni, excellent for collecting a good amount of sauce at each bite. To prepare the pasta with venison sauce, as usual bring a pot of water to a boil. Toss the pasta for 6 people, salt it and cook according to your tastes and the cooking time indicated on the package. Drain preferably al dente and season with the meat sauce and, possibly, with a grated parmesan cheese. At this point your venison sauce with the scents of the forest will be served!
