DF’s recipe for a creamy and genuine saffron pasta

To prepare an excellent saffron pasta, you need a few, simple ingredients (the quantities indicated refer to four large portions):

  • 360 g of short pasta (farfalle, fusilli, orecchiette, etc.);
  • 100 g of fresh or smoked bacon (already cut into cubes, or in a single slice about a finger thick);
  • 2 sachets of saffron;
  • 200 ml of cooking cream;
  • dry white wine (about half a glass);
  • extra virgin olive oil;
  • chives for garnish.

The preparation is very simple. To start, simply bring plenty of salted water to a boil, in which you will then boil the pasta for the time indicated on the package. While waiting for the pasta to cook, cut the bacon into cubes.

In a large pan, heat a tablespoon of extra virgin olive oil; Then add the bacon cubes and brown them to perfection, for about 4 minutes, over moderate heat.

When the bacon is crispy and golden, turn up the heat, add the white wine and continue cooking until completely evaporated.

Now it’s time to add the cream and saffron (which you have previously dissolved in about half a glass of boiling, salted water). Finish cooking the sauce over moderate heat, for a few minutes.

Meanwhile, the pasta will be ready, perfectly al dente: after draining it, pour it into the pan where you prepared the sauce, keeping aside a little cooking liquid. Cook over moderate heat for a few minutes, stirring frequently to mix the ingredients well and adding water – if necessary – to prevent the pasta from sticking to the bottom of the pan.

When cooked, serve, garnish with chopped fresh chives, and bring to the table the hot pasta, topped with a nice sprinkling of Parmigiano Reggiano PDO.

Saffron pasta: all variations

There are endless variations to our saffron pasta recipe: you can, for example, replace bacon with bacon, diced ham or speck sticks.

If you want to give your saffron pasta a further touch of flavor you can add to the recipe a zucchini cut into strips, which you will add to the sauce immediately after browning the bacon.

Finally, if you want a lighter and healthier saffron pasta, you can replace the cream with a few tablespoons of spreadable cheese like Philadelphia: the result will be a first course equally creamy, but much more digestible and with reduced caloric intake.
