Antica Torroneria Piemontese
Back in 1885, Giuseppe Sebastè decided to inspire all his desserts of excellence around the queen of the territory, the Piedmont Hazelnut i.G.P. from the Langhe.
Now in its 5th generation, the company continues to create excitement and show passion for an ancient craft of the home territory, where tradition and the search for innovation coexist every day.
Speed and economy are forbidden in the company, the old ones with their knowledge instruct the new generations on how to obtain the best end result using the right times and the right temperatures in the processing.
All this combined with excellent raw materials ensure that the only acceptable end result is PERFECTION: both in appearance and taste.
Processing
At Antica Torroneria Piemontese, men, machinery and rhythms adapt to the product, never the other way around.
Rule number 1 slow times for workmanship to the highest standard.
Nougat preparation times change according to the seasons and the characteristics of the raw materials.
The same happens with Tartufini Dolci, the amalgamation is fundamental and is left to rest for a whole night before continuing processing.
All final products are exclusively formed and cut one by one exclusively by hand, each individual product will be exclusive and an irreplicable unique piece.
Raw materials
On the strength of experience, raw materials are highly selected and their products are all free of colouring agents and preservatives.
Fragrant honey, refined sugar and pure chocolate with at least 50 per cent cocoa enhance the taste of the P.G.I. Piedmont Hazelnuts purchased exclusively from local farmers within a few kilometres.
They are shelled, roasted in small batches as tradition dictates with hot air only when really needed.
