It is well known that Italy has a very favourable environment and climate for olive cultivation.
In Canino, in the Tuscia Viterbese Laziale region, there is a truly unique territory halfway between the sea and the volcanic cone of Lake Bolsena, and it is within this uncontaminated place that the I&P company is located.
In 30 km there are different soils and different microclimates, which allow each variety of olive tree to express itself at its best with aromas and perfumes each one different from the other.
All the company’s olive groves are located within the municipalities of Canino, Tessennano and Arlena di Castro.
The varieties used are those cultivated for about 3,000 years by the ancient Etruscan civilisation and in total there are 6: leccino, frantoio, maurino, pendolino, rosciola and the queen of the area; the Caninese.
At harvest time, the olives are immediately placed inside refrigerated vans to avoid stressing the fruit.
They are then taken to the company’s oil mill a few metres from the land and pressed within 3-4 hours at the most. After pressing, the oil obtained is cold pressed and then filtered and placed under a protected atmosphere to maintain the aromas and taste unaltered over time.

Making quality is very difficult because…..
The oil is already inside the olive and it has to be the miller who, thanks to his skill and extreme sensitivity, has to extract the essence by damaging it as little as possible.
Making high quality evo oil is a very complex operation that requires: study, technical skills and a lot… a lot of hard work.
And it is for this reason that the Italian agro-industry must go exclusively for premium products and prices that promote a unique quality that cannot be obtained elsewhere.

This word originated in France and is used to indicate a precise portion of territory, variety of grape within a specific geographical area.
Paolo Borzatta, founder of I&P, has chosen to bring this very complex technique back into the world of high quality extra virgin olive oil.
For this simple reason, the names of all this company’s oils bear the following wording: Grand Cru + name of the variety + name of the place of cultivation.
In addition, on each bottle you will find a QR code from blockchain technology that will allow you, by framing it with your smartphone, to know the entire history of the bottle of EVO oil you have chosen and purchased
