Benedetto Cavalieri
Pastificio Benedetto Cavalieri is based in Maglie in the province of Lecce.
As far back as 1800, the family was dedicated to the cultivation of wheat in the sunny and colourful Apulian countryside.
Later in 1918, with all the experience he had gained in growing and milling wheat, Benedetto Cavalieri decided to expand his business by opening the present artisanal pasta factory named after him.
It was designed to produce artisanal pasta of the highest quality, with wheat produced only in the Apulian countryside and the hills of Basilicata.
From the beginning of its activity, this company focused exclusively on the quality of the raw materials and the modernity of the machinery.
The DELICATO method was chosen for the processing of the pasta: the semolina is processed through the exclusive use of bronze dies.
Once drawn, it is taken to a chamber where, by means of a huge fan, it is dried for many hours so as to guarantee a truly invincible consistency and hold during cooking.
