Vinification and aging
Destemming of chilled grapes.
Fermentation for 12 days in stainless steel at a temperature of 24 ° C, with daily pumping over.
Maturation of 12 months in oak French 300 l.
Refinement in bottle for 6 months.
Sensory notes
Intense ruby color with violet reflections aromas of spices of great character.
On the palate it is juicy and fragrant, with soft tannins to the scent reminiscent of vanilla, juniper and chocolate.
Persistent finish with a licorice finish. It goes well in a stew with polenta or braised meats.
Paired with a pasta with high quality game meat sauce .
Serve at a temperature of 16-18 degrees centigrade.
