Description Pastificio dei Campi
In 2004 Giuseppe Di Martino, pasta maker for three generations in Gragnano, realized that the traceability of the raw material used to produce Italian pasta was approximate.
He immediately understood that the traceability of the raw material was an essential value of a food product, and began his project that will then lead him to the foundation of the Pastificio dei Campi.
He decided to buy only Italian Apulian wheat of the highest quality, the best available on the market and following various researches he chose that of the Dauno Apennines. Involving the local peasants he asked for 4 simple things:
- High nutritional values
- No use of chemical fertilizers
- No use of glyphosate
- Recover only the oldest varieties
The intentions and expectations were considered crazy by local farmers: it was very difficult to guarantee a harvest with those quality levels, without the use of chemistry, especially if you wanted to maintain a high yield.
The solution was simple: give up high yields, provide for a rotation to avoid soil impoverishment due to monoculture and pay farmers every year, even when the wheat harvest was not foreseen.
So it was that, returning to the ancient technique of three-year rotation, a huge leap was made at the same time towards the revolutionary concept of 100% traceability throughout the supply chain.
