After choosing your favorite pasta format, you can start preparing the gourmet tuna pasta with tomato sauce by heating a couple of tablespoons of olive oil over medium heat in a non-stick pan that has a certain thickness, since you will need to add the tomato puree later.

Proceed by browning the garlic and anchovies until they have melted. At this point add both the chilli and the desalted capers.

Proceed by cutting the cherry tomatoes in half and adding them to the pan. It will be necessary to brown them just a couple of minutes before adding the tomato puree and stir and lower the heat.

Wait 6-7 minutes in which we will take care of cutting the tuna into cubes of about one centimeter. After the time has elapsed, add the olives and pieces of tuna and continue cooking for another 3-5 minutes until the tuna is cooked.

It is essential that the tuna is added at the end of cooking because otherwise it will dry out too much.

  • 1/2 Tropea onion
  • juice of 1/2 lemon
  • fresh mint to taste

Start by slicing theonion very thinly and after pouring a couple of tablespoons of extra virgin olive oil into a non-stick pan with a wide bottom, put it to fry over low heat.

  • 75 g red onion
  • 30 g pine nuts

To prepare the gourmet tuna pasta in white and with eggplant you must first wash and dry the aubergines that will be cut into slices and then into cubes. They need to be purged and lose their typical bitter subtaste by sprinkling them with coarse salt.
